Elles apportent aussi des fibres et des glucides pr\u00e9sents sous forme d&rsquo;amidon. Elles peuvent donc compl\u00e9ter les apports de prot\u00e9ines animales pour varier les apports au quotidien. N&rsquo;oubliez pas que la consommation de prot\u00e9ines est essentielle : ce sont elles qui apportent les briques de construction \u00e0 notre corps pour la synth\u00e8se de ses propres prot\u00e9ines ! <\/p>\n\n\n\n<p>Pour avoir une assiette \u00e9quilibr\u00e9e, il est important de les associer aux c\u00e9r\u00e9ales pour avoir un apport prot\u00e9ique complet. On pourra apporter 2\/3 de c\u00e9r\u00e9ales + 1\/3 de l\u00e9gumineuses sur une journ\u00e9e.<\/p>\n\n\n\n<p>Elles sont sans gluten comme les farines qui en sont extraites.<\/p>\n\n\n\n<p>Par contre, elles peuvent \u00eatre plus difficiles \u00e0 dig\u00e9rer pour les personnes qui souffrent de probl\u00e8mes digestifs chroniques, d&rsquo;intestins fragiles et irritables. Elles peuvent g\u00e9n\u00e9rer alors des douleurs, des ballonnements et des flatulences. <strong>Les prot\u00e9ines v\u00e9g\u00e9tales sont plus difficiles \u00e0 dig\u00e9rer pour tout le monde, mAIS cela est particuli\u00e8rement le cas pour tout le monde si elles ne sont pas pr\u00e9par\u00e9es correctement !<\/strong> Je recommande plut\u00f4t une consommation 3 \u00e0 4 fois par semaine seulement et surtout de faire attention aux conseils suivants.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">De l&rsquo;importance du trempage<\/h2>\n\n\n\n<div class=\"wp-block-columns is-layout-flex wp-container-core-columns-is-layout-9d6595d7 wp-block-columns-is-layout-flex\">\n<div class=\"wp-block-column is-layout-flow wp-block-column-is-layout-flow\">\n<p>Les l\u00e9gumineuses, les amandes, les noix, les pois sont des graines. La graine est une forme en \u00ab\u00a0sommeil\u00a0\u00bb dite en dormance de la plante. <\/p>\n\n\n\n<p>Le stockage des r\u00e9serves est optimis\u00e9 pour les pr\u00e9server sur le long terme des attaques microbiennes, des conditions m\u00e9t\u00e9o&#8230; et pour permettre qu&rsquo;elles soient disponibles intactes au r\u00e9veil pour la germination de la plante. Le processus de digestion va \u00eatre r\u00e9duit ainsi que l&rsquo;absorption des nutriments, des vitamines et des min\u00e9raux apport\u00e9s par le repas. Cela demande donc un peu d&rsquo;anticipation des repas.<\/li>\n\n\n\n<li>Jeter l&rsquo;eau de trempage indigeste<\/li>\n\n\n\n<li>Rincer \u00e0 l&rsquo;eau claire<\/li>\n\n\n\n<li>Commencer la cuisson \u00e0 l&rsquo;eau froide, porter \u00e0 \u00e9bullition puis laisser cuire \u00e0 feu doux<\/li>\n\n\n\n<li>Saler uniquement en fin de cuisson<\/li>\n<\/ol>\n\n\n\n<p>Le trempage peut aussi \u00eatre tr\u00e8s int\u00e9ressant pour les noix, les amandes, les noisettes particuli\u00e8rement si on est sujets \u00e0 des troubles de la digestion et que l&rsquo;on en a une forte consommation quotidienne. Le riz, le millet, le quinoa peuvent aussi \u00eatre tremp\u00e9s et bien rincer avant cuisson. <\/p>\n\n\n\n<p><strong>quid du bicarbonate ?<\/strong> il est connu pour r\u00e9duire le temps de cuisson mais il entrainerait une perte de vitamines notamment B1 : \u00e0 contre-balancer avec le fait que la cuisson le fait aussi? <\/p>\n\n\n\n<p><\/p>\n\n\n\n<p><\/p>\n\n\n\n<p><strong>Plus en d\u00e9tails <\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>amandes, noisettes au moins 2 heures voir sur la nuit, notamment si vous en consommez r\u00e9guli\u00e8rement<\/li>\n\n\n\n<li>noix de cajou : 2-3h voir sur la nuit <\/li>\n\n\n\n<li>avoine : 12h<\/li>\n\n\n\n<li>lentilles vertes et noirs, haricots rouges et blancs, pois chiches : 12 \u00e0 48h et pre-germination possible derri\u00e8re<\/li>\n\n\n\n<li>riz, bl\u00e9, quinoa, \u00e9peautre, sarrasin : 8-10h ou au minimum \u00e0 rincer abondamment avant cuisson<\/li>\n\n\n\n<li>ne se trempent pas : noix de macadamia, noix du Br\u00e9sil, pistaches<\/li>\n<\/ul>\n\n\n\n<hr class=\"wp-block-separator has-alpha-channel-opacity\"\/>\n\n\n\n<h2 class=\"wp-block-heading\">Et les graines germ\u00e9es alors ?<\/h2>\n\n\n\n<p>La germination est un autre proc\u00e9d\u00e9 tr\u00e8s int\u00e9ressant pour augmenter la quantit\u00e9 en vitamines et min\u00e9raux des graines et les rendre plus digestes.
