Pour autant ce n\u2019est pas un simple ph\u00e9nom\u00e8ne de mode alimentaire !  Ce que vous voyez peut-\u00eatre comme de la d\u00e9co sur les assiettes sont en r\u00e9alit\u00e9 de r\u00e9elles bombes nutritionnelles.<\/em><br><em>Les graines germ\u00e9es sont int\u00e9gr\u00e9es \u00e0 l\u2019alimentation depuis plusieurs mill\u00e9naires dans certains pays. Elles rajoutent de la diversit\u00e9 \u00e0 notre alimentation (en terme de forme, de couleur et de go\u00fbt et texture) mais ont surtout de belles propri\u00e9t\u00e9s nutritionnelles ! Je vous avais d\u00e9j\u00e0 parl\u00e9 de l\u2019importance du trempage des l\u00e9gumineuses, graines pour permettre une meilleure digestion, l\u2019\u00e9tape suivante est de les laisser germer \ud83d\ude42 Je vous explique tout dans cet article.<\/em><\/p>\n<\/div>\n<\/div>\n\n\n\n<h2 class=\"wp-block-heading\">Quelles graines peut-on faire germer ?<\/h2>\n\n\n\n<p>On en trouve une grande vari\u00e9t\u00e9, des plantes les plus communes dans notre alimentation comme le bl\u00e9, \u00e0 d\u2019autres moins r\u00e9pandues :<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Brassicac\u00e9es (= Crucif\u00e8res) : brocolis, chou rouge, chou vert, navet, radis rose ou noir, raifor<\/li>\n\n\n\n<li>Betterave<\/li>\n\n\n\n<li>Fabac\u00e9es (= l\u00e9gumineuses) : f\u00e9nugrec, azuki, haricots mungo, lentilles vertes &#8211; noires &#8211; corail, soja, pois chiche, alfalfa = luzerne cultiv\u00e9e<\/li>\n\n\n\n<li>Poac\u00e9es (= c\u00e9r\u00e9ales et pseudo-c\u00e9r\u00e9ales) : bl\u00e9, \u00e9peautre, kamut, millet, riz, seigle, sarrasin, orge, quinoa, avoine, chanvre<\/li>\n\n\n\n<li>Apiac\u00e9es (= Ombellif\u00e8res) : carotte, c\u00e9leri, fenouil, cumin, coriandre, carvi<\/li>\n\n\n\n<li>Mais aussi des graines d\u2019ol\u00e9agineux : tournesol, s\u00e9same, amande <\/li>\n\n\n\n<li><\/li>\n\n\n\n<li>et de plantes \u00abmucilagineuses\u00bb : moutarde, chia, roquette, cresson<\/li>\n<\/ul>\n\n\n\n<p>Si vous d\u00e9butez, <strong>commencez par des graines NON mucilagineuses<\/strong>, qui sont plus difficiles \u00e0 faire germer sans les faire moisir.<\/p>\n\n\n\n<hr class=\"wp-block-separator has-alpha-channel-opacity\"\/>\n\n\n\n<h5 class=\"wp-block-heading\">NOTE sur les graines germ\u00e9es mucilagineuses<\/h5>\n\n\n\n<p>Le <span class=\"has-inline-color has-dark-green-color\">mucilage<\/span> est cette substance v\u00e9g\u00e9tale&nbsp;g\u00e9latineuse, transparente et collante s\u00e9cr\u00e9t\u00e9e&nbsp;par certaines plantes au niveau de leurs racines ou par leurs graines pour se d\u00e9velopper. Elles ont besoin pour cela d\u2019\u00eatre constamment en contact avec de l\u2019eau, et leur germination \u00e0 la maison n\u00e9cessitera donc un germoir adapt\u00e9. Certaines sont des inhibitrices d&rsquo;une de nos enzymes digestives, la trypsine, perturbant l&rsquo;absorption des acides amin\u00e9s des prot\u00e9ines. <\/p>\n\n\n\n<p>En dehors des fruits secs, des l\u00e9gumineuses, <strong>le soja contient aussi de nombreuses anti-nutriments<\/strong>. La fermentation et mode de pr\u00e9paration du soja va en \u00e9liminer une partie. Il sera donc aussi plus int\u00e9ressant de consommer du soja ferment\u00e9 (miso, tempeh, natto). Et ce, \u00e9galement pour leur teneur moins importante en phyto-oestrog\u00e8nes (par rapport aux produits tr\u00e8s industriels occidentaux : lait, yaourt et cr\u00e8me de soja). Attention \u00e0 ne pas sur-consommer du soja, et \u00e0 sa consommation \u00e0 certaines p\u00e9riodes de la vie (b\u00e9b\u00e9, enfant, adolescent, femmes enceintes, hommes) ! En effet, le soja consomm\u00e9 dans nos r\u00e9gions occidentales contient de fortes teneurs en phyto-oestrog\u00e8nes qui interf\u00e9rent n\u00e9gativement avec notre m\u00e9tabolisme. <\/p>\n\n\n\n<p>LIRE AUSSI mon article sur les <a href=\"https:\/\/endopkandco.org\/les-phyto-oestrogenes-partie-1\/\">phyto-oestrog\u00e8nes<\/a> pour l&rsquo;association Endopk and Co. <\/p>\n\n\n\n<p>Autre site int\u00e9ressant sur les derni\u00e8res \u00e9tudes scientifiques sur les graines germ\u00e9es, sur le <a href=\"https:\/\/www.altheaprovence.com\/les-graines-germees-comment-utiliser-leurs-proprietes-medicinales\/\" target=\"_blank\" rel=\"noreferrer noopener\">blog de Christophe Bernard d&rsquo;Althea Provence<\/a> !<\/p>\n\n\n\n<p><strong>MAIS ATTENTION : la germination n&rsquo;\u00e9limine pas tous les phytates.<\/strong> Ne consommez pas en exc\u00e8s d&rsquo;aliments germ\u00e9s surtout si vous avez des soucis digestifs. Comme pour tout c&rsquo;est l&rsquo;exc\u00e8s qui fait le poison. Commencer \u00e0 manger de fortes quantit\u00e9s de l\u00e9gumineuses germ\u00e9es pourra ne pas \u00eatre bien tol\u00e9r\u00e9 par votre syst\u00e8me digestif. <\/p>\n\n\n\n<hr class=\"wp-block-separator has-alpha-channel-opacity\"\/>\n\n\n\n<h2 class=\"wp-block-heading\">Comment faire germer des graines chez soi ?<\/h2>\n\n\n\n<p>Rien de plus simple ! Je vous explique ci-dessous comment proc\u00e9der pour les graines NON mucilagineuses. Ces derni\u00e8res sont un peu plus complexes \u00e0 faire germer comme mentionn\u00e9 pr\u00e9c\u00e9demment. Leur mucilage emp\u00eache une bonne oxyg\u00e9nation. <\/p>\n\n\n\n<p>Quand les r\u00e9colter pour les consommer? Quelles sont les pr\u00e9cautions \u00e0 respecter pour \u00e9viter toute intoxication alimentaire et pourrissement des graines ?&nbsp;Des cas d\u2019intoxication alimentaire aux graines germ\u00e9es ont en effet \u00e9t\u00e9 rapport\u00e9s par le pass\u00e9, suite \u00e0 une contamination par Escherichia coli et Salmonella. Il s\u2019est av\u00e9r\u00e9 que ces bact\u00e9ries \u00e9taient contenues dans les graines et non apparues lors du processus de germination !<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Attention \u00e0 <strong>acheter des graines de qualit\u00e9<\/strong>, d\u2019un circuit court, local (m\u00eame si ce n\u2019est pas toujours une garantie seule) avec une tra\u00e7abilit\u00e9 !<\/li>\n\n\n\n<li><strong>Respecter des r\u00e8gles d\u2019hygi\u00e8ne<\/strong>.
