Plus les fleurettes du brocolis traditionnel sont vertes, plus elles sont riches en nutriments int\u00e9ressantes. Avec le temps, elles s&rsquo;oxydent : jaunissent, et les vitamines sont d\u00e9grad\u00e9es, et une saveur plus am\u00e8re se d\u00e9veloppera. <\/p>\n\n\n\n<p>Vous pouvez aussi consommez le brocoli cru en le d\u00e9taillant en petites fleurettes fines et \u00e0 assaisonner comme un taboul\u00e9 ! Le brocoli cru apportera de la vitamine C (autant qu&rsquo;un kiwi) et la myrosinase sera pr\u00e9serv\u00e9e. Cette enzyme permet d&rsquo;activer les compos\u00e9s soufr\u00e9s du brocoli qui interviennent dans la d\u00e9toxication h\u00e9patique.
