Ils apportent des antioxydants, polyph\u00e9nols, vitamines qui vont aider notamment notre corps \u00e0 neutraliser les \u00e9l\u00e9ments toxiques apport\u00e9s par d\u2019autres mode de cuisson (friture, grill\u2026)<\/li>\n\n\n\n<li>choisir des huiles de cuisson de qualit\u00e9 et qui r\u00e9sistent aux fortes temp\u00e9ratures sans g\u00e9n\u00e9rer des compos\u00e9s toxiques<\/li>\n<\/ul>\n\n\n\n<p>Le tout est de trouver un \u00e9quilibre au quotidien, non de supprimer les plaisirs ! Consommer cru ne convient pas non plus forc\u00e9ment \u00e0 tous les intestins notamment si vous souffrez de MICI (RCH, Crohn, SII) ! N&rsquo;h\u00e9sitez pas \u00e0 me contacter pour vous aider dans un accompagnement alimentaire. En effet, la cuisson d\u00e9truit pas mal de choses mais elle a aussi des avantages non n\u00e9gligeables ! Elle permet d&rsquo;\u00e9liminer une partie des virus et bact\u00e9ries pathog\u00e8nes, de rendre consommables certains aliments qui sont toxiques crus (pomme de terre, manioc&#8230;), d&rsquo;attendrir les fibres les plus dures et de pr\u00e9dig\u00e9rer l&rsquo;amidon.  <\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Mode de cuisson et impact sur la glyc\u00e9mie<\/h2>\n\n\n\n<p>Le mode de cuisson influence aussi la charge glyc\u00e9mique des repas. Plus vous cuirez des f\u00e9culents type riz, p\u00e2tes, plus vous augmenterez le taux de sucre de ces aliments. Il est pr\u00e9f\u00e9rable de pr\u00e9server une cuisson al dente. <\/p>\n\n\n\n<p>La pomme de terre est un l\u00e9gume fortement glyc\u00e9mique. Mais il est possible de la cuire et de la laisser refroidir avant de la consommer. Le refroidissement va modifier la structure de l&rsquo;amidon et le rendra moins glyc\u00e9mique. Un r\u00e9chauffage n&rsquo;affectera pas cette modification et sera donc possible.<\/p>\n\n\n\n<p>Les pur\u00e9es, les soupes cassent les fibres qui permettent de ralentir le passage des sucres dans le sang. Ils r\u00e9duisent le temps de travail du syst\u00e8me digestif. Ils seront donc plus glyc\u00e9miques. <\/p>\n\n\n\n<p>Poour en savoir plus sur la glyc\u00e9mie, les impacts du sucre sur notre sant\u00e9, vous pouvez <a href=\"https:\/\/nathalie-faggianelli.fr\/index.php\/2021\/12\/12\/le-sucre-qui-est-il-et-pourquoi-le-reduire\/\">lire mon article sur ce sujet.<\/a> <\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Les diff\u00e9rents modes de cuisson<\/h3>\n\n\n\n<p>Les modes de cuisson les plus sains sont les plus doux, ceux qui pr\u00e9servent les nutriments, tout en r\u00e9duisant la quantit\u00e9 de mati\u00e8res grasses, de sel et de sucre ajout\u00e9s. Privil\u00e9giez ainsi les cuissons au four (temp\u00e9rature ne soit pas trop \u00e9lev\u00e9e, plut\u00f4t max 180\u00b0C), \u00e0 l&rsquo;eau bouillante, \u00e0 l&rsquo;\u00e9touff\u00e9e, \u00e0 feu doux, et en premi\u00e8re intention, \u00e0 la vapeur. Et au contraire, limitez les m\u00e9thodes de cuisson comme la friture, l&rsquo;usage du Airfryer, le barbecue, le r\u00f4tissage et la grillade (qui doivent rester de petits plaisirs occasionnels mais pas des cuissons quotidiennes). <\/p>\n\n\n\n<p><\/p>\n\n\n\n<div class=\"wp-block-columns is-layout-flex wp-container-core-columns-is-layout-9d6595d7 wp-block-columns-is-layout-flex\">\n<div
