Notre corps d\u00e9compose nos aliments en mol\u00e9cules de sucres simples qu\u2019il sait utiliser dont le glucose dont il a besoin pour fonctionner au quotidien !<\/em> <em>MAIS dans nos modes de consommation actuels, nous avons une SUR-consommation de sucre. Il n\u2019apporte rien d\u2019int\u00e9ressant au corps et est m\u00eame d\u00e9l\u00e9t\u00e8re en exc\u00e8s ! Le sucre de canne complet vous apportera des textures plus croquantes que le rapadura et muscovado. <\/p>\n\n\n\n<p><strong>Quid du sucre blanc de betterave sucri\u00e8re ?<\/strong> il est en effet naturellement blanc sans raffinage. Sous cette forme, il ne pose pas tr\u00e8s probl\u00e8me, il reste un sucre \u00e0 charge glyc\u00e9mique \u00e9lev\u00e9 mais il contient encore ses min\u00e9raux. Cependant il est souvent recolor\u00e9, caram\u00e9lis\u00e9 pour donner vergeoise et cassonade ! On pense souvent que ces sucres sont des sucres complets mais il n&rsquo;en est rien ! <\/p>\n\n\n\n<p><strong>Et la m\u00e9lasse ? <\/strong>c&rsquo;est le r\u00e9sidu brut du sucre de canne, que l&rsquo;on \u00e9limine par raffinage. C&rsquo;est un sirop \u00e9pais de couleur brun fonc\u00e9. Il a un go\u00fbt tr\u00e8s prononc\u00e9 de r\u00e9glisse et caramel cuit. Son go\u00fbt peut \u00eatre difficile \u00e0 marier avec certaines p\u00e2tisseries. Ce sont des l\u00e9gumes aux saveurs l\u00e9g\u00e8rement sucr\u00e9es. Par exemple un g\u00e2teau \u00e0 la carotte, un financier \u00e0 la farine de ch\u00e2taigne ou la pur\u00e9e de courge, une mousse de betterave&#8230; <\/p>\n\n\n\n<p>Bien s\u00fbr, il est important aussi d&rsquo;\u00e9quilibrer la charge glyc\u00e9mique de vos assiettes pour compenser par exemple des aliments plus sucr\u00e9s, un dessert&#8230; notamment dans le cadre d\u2019un <a href=\"https:\/\/nathalie-faggianelli.fr\/index.php\/2022\/04\/18\/sopk\/\">SOPK<\/a>, <a href=\"https:\/\/nathalie-faggianelli.fr\/index.php\/2022\/03\/18\/endometriose\/\">endom\u00e9triose-ad\u00e9nomyose<\/a>, troubles de la fertilit\u00e9,&nbsp;SPM, risque de diab\u00e8te gestationnel. Trop souvent, il est produit industriellement en \u00e9tant trop chauff\u00e9. Il perd ainsi beaucoup de ses nutriments et b\u00e9n\u00e9fices. Il est aussi calorique que le sucre blanc. Il est souvent trop riche en fructose, dont la consommation excessive d\u00e8s 50g par jour est d\u00e9l\u00e9t\u00e8re pour le foie.
