Savez-vous pourquoi ils sont b\u00e9n\u00e9fiques pour notre sant\u00e9 ?<\/em><\/p>\n\n\n\n<p><em>Les chiffres ANSES de 2015 indiquent que 78% des adultes consomment en exc\u00e8s des acides gras satur\u00e9s et 90% sont d\u00e9ficitaires en om\u00e9ga 3 (96% chez les 18-34 ans) !<\/em><\/p>\n\n\n\n<p><em>Les om\u00e9ga 3 sont anti-inflammatoires, n\u00e9cessaires au bon fonctionnement et \u00e9quilibre nerveux. Indispensables en projet b\u00e9b\u00e9 (motilit\u00e9, d\u00e9veloppement des spermatozo\u00efdes, ut\u00e9rus non enflamm\u00e9\u2026) et pour tout trouble cognitif, probl\u00e9matique de peau dont s\u00e9cheresse cutan\u00e9e, acn\u00e9, ecz\u00e9ma\u2026<\/em> <em>Un d\u00e9ficit expose donc \u00e0 plus de risque de malades cardiovasculaires, probl\u00e8mes li\u00e9s au cholest\u00e9rol, troubles anxieux et d\u00e9pressifs, et de la m\u00e9morisation, troubles visuels avec s\u00e9cheresse oculaire, mauvais d\u00e9veloppement du foetus in utero, hypo-fertilit\u00e9\u2026<\/em><\/p>\n<\/div>\n<\/div>\n\n\n\n<h2 class=\"wp-block-heading\">Qui sont -ils ?<\/h2>\n\n\n\n<p>Les om\u00e9ga 3 sont des <strong>Acides Gras Poly-Insatur\u00e9s = AGPI (PUFA en anglais)<\/strong>. Cette insaturation les rend donc aussi plus sensibles \u00e0 l\u2019oxydation. Ce sont des acides gras dits essentiels car l\u2019organisme ne peut pas les fabriquer. De ce fait, ils doivent \u00eatre apport\u00e9s par l\u2019alimentation r\u00e9guli\u00e8rement.<\/p>\n\n\n\n<p>Il en existe 3 sortes : <strong>ALA \u00abom\u00e9ga 3 v\u00e9g\u00e9taux\u00bb et EPA et DHA \u00abom\u00e9ga 3 animaux\u00bb<\/strong>. <\/p>\n\n\n\n<p>La VNR pour DHA et EPA est de 250 mg par jour, dans un ratio de 1:5 \u03a93:6. C&rsquo;est-\u00e0-dire que l&rsquo;alimentation devrait apporter 5 mol\u00e9cules \u03a96 pour une d&rsquo;\u03a93. Un apport en ALA = om\u00e9ga 3 v\u00e9g\u00e9tal ne suffira bien souvent pas ! Et il sera important d&rsquo;apporter alors une source animale de qualit\u00e9 ou de se tourner vers une huile v\u00e9g\u00e9tale de qualit\u00e9 enrichie en <strong>Schizochytrium sp<\/strong>, une micro-algue qui apporte du DHA (seule source v\u00e9g\u00e9tale qui apporte DHA directement !).<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>poissons gras (sardines, maquereaux, hareng, saumon sauvage) <\/li>\n\n\n\n<li>oeufs de qualit\u00e9 (et viande d&rsquo;un \u00e9levage en plein air et respectueux)<\/li>\n\n\n\n<li>graines de chia europ\u00e9ennes<\/li>\n\n\n\n<li>noix de Grenoble fraiches<\/li>\n<\/ul>\n\n\n\n<p>A l&rsquo;origine, toutes les viandes apportaient aussi des om\u00e9ga 3. Aujourd&rsquo;hui, avec les \u00e9levages industriels intensifs, le fait de nourrir le b\u00e9tail uniquement au soja, tournesol, alimentation transform\u00e9e, la viande en contient tr\u00e8s peu ! Les vaches Jersiaises produisent moins de lait que les vaches de races Hollenstein, mais il est de meilleur qualit\u00e9, contient une proportion plus importante d&rsquo;om\u00e9ga 3. Privil\u00e9giez autant que possible des \u00e9levages de petits producteurs, respectueux de leurs animaux, les laissant brouter en plein air ! <\/p>\n\n\n\n<p>Le gras et notamment les om\u00e9gas 3 ne font pas grossir ! Vous pouvez lire mon article sur le sujet: <a href=\"https:\/\/nathalie-faggianelli.fr\/index.php\/2022\/09\/26\/stop-a-la-peur-du-gras\/\">STOP \u00e0 la peur du gras !<\/a><\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Qui des huiles v\u00e9g\u00e9tales apportant des om\u00e9ga 3 ?<\/h2>\n\n\n\n<p><strong>Les huiles v\u00e9g\u00e9tales apportant un pr\u00e9curseur des om\u00e9gas 3 : l&rsquo;ALA sont celles de lin et cameline, puis de colza. Ce ne sont pas des huiles \u00e0 privil\u00e9gier ou \u00e0 prendre en exc\u00e8s ! <\/strong>Ce ne sont pas des huiles de notre alimentation ancestrale et traditionnelle. L&rsquo;huile de colza serait \u00e0 privil\u00e9gier mais \u00e0 consommer avec mod\u00e9ration. En effet, elles ne remplacent pas une huile d&rsquo;olive premi\u00e8re pression \u00e0 froid ! Dans tous les cas, ces huiles ne se font pas chauffer et doivent \u00eatre conserv\u00e9es au frais, et se gardent environ 3 mois.<\/p>\n\n\n\n<p>Ce sont des huiles tr\u00e8s fragiles qui s&rsquo;oxydent rapidement. Expos\u00e9es aux n\u00e9ons des magasins toute la journ\u00e9e, \u00e0 la temp\u00e9rature ambiante ou chauff\u00e9e en hiver et de pour de longues dur\u00e9es.
